Carrots on Rosh ha Shana symbolize golden coins – wishing a very successful year. 

Imberlach is a very easy dessert for all Jewish Hollidays. 

1 kg grated carrots 

1.2 kg  sugar 

150 gr nuts (pecans, walnuts, almonds) 

1 teaspoon of ground ginger 

Orange zest 


Thinly grate 1kg of carrots and place them in a pot . Cover the carrots with  the sugar and leave for 3 hours. After that add 1/4 glass of water  and cook  on high flame for 15 min. and  then on medium flame till the the juice evaporates and mixture becomes almost dry (it could take 2h) Add the nuts, ginger, orange zest and pour the mixture on a tray covered with baking paper. Press the mixture with the rolling pin  and cut into cubes . Sprinkle some ginger powder and leave to dry for 2- 3 days .
